yummy!

our new favorite.


carrot banana muffin
1/3 cup oil
2/3 cup sugar
2 eggs (or 3T oil, 3T water, 2t baking powder whisked together)
2 cups flour
1 t baking soda
1/2 t salt
1/2 t cinnamon
3 very ripe smashed bananas
1 cup grated carrots

mix oil, sugar, eggs (or egg substitute), then combine flour, soda, cinnamon, salt and add to wet mixture. add in bananas and carrots. spoon into paper lined muffin tin and bake at 350 until toothpick comes out clean.
*paper liners especially recommended for egg free version
*this recipe makes about 18 muffins

I love new recipes - especially for muffins, but did I miss it? How much flour does it call for?

i'll have to try that. we have some ripe bananas. sounds like a yummy use for them.
